THE STORY
Irma S. Rombauer put up her own savings to publish The Joy of Cooking in 1931. Her daughter Marion tested recipes and drew the original illustrations, and later revisions kept the book a Rombauer-Becker family project — Marion’s 1951 revision, then her son Ethan Becker’s work on the current editions. The New York Public Library counts it among the 150 most important and influential books of the twentieth century. It remains above all a teaching cookbook: reference sections explain the reasons behind techniques, not just ingredient lists.
THIS EDITION
Published by Scribner in 2006 and edited by Ethan Becker, the 75th Anniversary Edition pairs roughly 4,000 retested and updated classics with about 500 new recipes — roughly 4,500 in total. It restores the direct, witty voices of Marion Rombauer Becker and Irma Rombauer and reinstates chapters cut or slimmed in the 1997 revision: cocktails and party drinks, frozen desserts, canning, salting and smoking, jellies and preserves, pickles and relishes, and freezing foods. The encyclopedic Know Your Ingredients chapter returns, revised and expanded. New additions include slow-cooker recipes (a first for any edition of Joy), a new Grains chapter, high-altitude baking guidance, and a “cook for a day, eat for a week” planning section. Front matter includes a note from Julia Child dated June 2004 and a letter from Ethan Becker.
ILLUSTRATIONS AND DESIGN
Interior illustrations are copyright 2006 by John Norton, including new technique drawings that cover knife skills, splitting cake layers, setting a table, and making tamales. Jacket design is credited to John Fullbrook III and Tom Bean; the book was designed by Liney Li and set in Frutiger. The jacket carries the red-circle “joy OF COOKING” logo on white with blue and red lettering, and the back panel organizes the edition into three ideas: Back to Basics, Brand New, and Return to Reference. The listing photographs show the jacket flaps, copyright page, table of contents, recipe spreads from the Meat and Grains chapters, and the Know Your Ingredients section.
